Course Objective The aim of the course is to learn the relation of food quality and microorganisms. To learn the classic and rapid test techniques and tools, used in microbiological analysis of foods and food plants. To improve their handling in microbiological laboratory practice.
Course Content Microbiological aspects of quality control. Indicators of pathogens and spoilage. Microbial toxins. Hurdle technology and applications. HACCP. Microbiological quality control criteria on food standards. Sampling and preparation for microbiological analyses. Media selecting according to purpose, faults, quality control. Basic and rapid methods for microbiological analysis of foods. Determination of sterilization methods. Tests for efficiency of sterilization. Evaluation of food safety and quality by microbiological analysis. Assessment of microbiological analysis results.
