Course Objective Purpose of this course is to learn about applications that create changes in the composition of lipids.
Course Content Effective factors on physical properties of oil and fats, technique, mechanism and practical applications of fractional crystallization, hydrogenation technology, hydrogenation mechanism and kinetics, hydrogenation catalysts, hydrogen production, properties of oils that is going to be hydrogenated, control of hydrogenation. in-es technology, triglyceride structure of lipids, the mechanism and kinetics of in-es reactions, calculations in in-es technique, in-es catalysts, practices of in-es, margarine technology.
Prerequisites No the prerequisite of lesson.
