Course Objective To have knovledge of slaughterhouse by-products and processing technology
Course Content Assessment of edible by-products (liver, heart, kidneys, brain, tripe, spleen, bowels, thmus, head, trotter, testis, gizzard), nutritional values and health risks of these products. Assessment of nonedible by products (skin, blood, bones, cartilage …). Assessment of nonedible by-products in medical and biological sciences.
